Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 10-12 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.
- Cook Halibut: Season the halibut fillets with salt and pepper. Heat olive oil in a skillet over medium heat, and cook the halibut for 4-5 minutes on each side or until opaque and easily flaked. Remove from heat, let cool slightly, then break the fish into bite-sized pieces.
- Prepare Vegetables: Chop the cherry tomatoes in halves, dice the cucumber, thinly slice the red onion, and finely chop the fresh parsley.
- Make Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, dried oregano, salt, and pepper to create a tangy Greek dressing.
- Assemble Salad: In a large bowl, combine the cooked pasta, flaked halibut, chopped vegetables, Kalamata olives, and crumbled feta cheese. Toss everything with the prepared dressing until evenly coated.
- Chill and Serve: Cover the salad and chill it in the refrigerator for at least 30 minutes to allow flavors to meld. Serve cold or at room temperature.
