Ingredients

Scale

Salad Ingredients

  • 1 1/2 cups walnuts (raw and unsalted)
  • 1/2 cup pumpkin seeds
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 1–2 apples or pears (diced)
  • 2 avocados (sliced)
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)

Dressing Ingredients

  • 1/3 cup honey or maple syrup
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste
  • Chili flakes (optional)

Instructions

  1. Roast Nuts and Seeds: Preheat your oven to 350°F (175°C). Spread the raw, unsalted walnuts and pumpkin seeds on a baking sheet and roast them for about 10 minutes, until they are lightly golden and fragrant. This step enhances their crunch and flavor.
  2. Prepare the Dressing: In a mixing bowl, whisk together 1/3 cup honey or maple syrup, 1/3 cup virgin olive oil, 1/4 cup balsamic or apple cider vinegar, 2 teaspoons Dijon mustard, 2 tablespoons honey, 1 tablespoon fig jam, 2 teaspoons orange zest, 2 tablespoons fresh orange juice, along with salt and black pepper to taste. Whisk until smooth and emulsified to create a sweet and tangy honey mustard dressing.
  3. Assemble the Salad: Take a large serving bowl and layer the salad greens along with the frisée leaves as the base. Evenly distribute diced apples or pears, sliced avocados, pomegranate seeds, the roasted walnuts and pumpkin seeds, and top with 1 cup of crumbled cheese like blue, feta, or goat cheese.
  4. Dress and Serve: Drizzle the prepared honey mustard dressing generously over the salad just before serving. Optionally sprinkle chili flakes for a bit of heat. Toss gently if desired or serve as is for a beautiful presentation.

Notes

  • Roasting the nuts and seeds not only adds flavor but also improves their texture in the salad.
  • For a vegan version, substitute honey with maple syrup and use vegan cheese or omit cheese.
  • Choose apples or pears depending on sweetness preference; crisp apples offer tartness while pears add softness.
  • Adjust seasoning and chili flakes in the dressing to your taste.
  • Make the dressing ahead and store refrigerated for up to 3 days for convenience.
