Ingredients
Scale
Truffle Mixture
- 200g marzipan raw paste (at least 50% almond content)
- 200g high-quality nougat cream
- A splash of rum or amaretto (optional)
Breading and Coating
- 200g dark chocolate (70% cocoa) for dipping
- Chopped almonds or desiccated coconut for rolling
Instructions
- Prepare Ingredients: Bring the marzipan and nougat cream to room temperature. Break the marzipan into small pieces and place them in a large mixing bowl to facilitate easier mixing.
- Mix the Base: Add the nougat cream to the marzipan pieces. Mix thoroughly by hand or with a dough scraper until the mixture is smooth and homogenous, with no visible streaks.
- Shape the Truffles: Take small portions of the mixture, approximately 15–20 grams each, and roll them into smooth round balls. Arrange the balls on a baking sheet lined with parchment paper to prevent sticking.
- Chill the Truffles: Place the baking sheet inside the refrigerator for at least 30 minutes or the freezer for 15 minutes, allowing the truffles to firm up for easier coating.
- Bread or Coat: Roll the chilled truffle balls in chopped almonds or desiccated coconut, or dip them into melted dark chocolate, ensuring the chocolate temperature does not exceed 50°C (122°F).
- Set the Coating: Allow the coated truffles to harden at room temperature or in the refrigerator until firm and ready to serve.
Notes
- Using marzipan with at least 50% almond content ensures a rich almond flavor.
- The optional splash of rum or amaretto adds a subtle depth of flavor but can be omitted for a non-alcoholic version.
- Melt the chocolate gently and avoid overheating above 50°C to prevent it from seizing.
- If rolling in chopped almonds, lightly toast them first to enhance flavor and crunch.
- Keep the truffles refrigerated if not serving immediately to maintain freshness.
- These truffles can be stored in an airtight container in the refrigerator for up to one week.
