- 4 small flour tortillas

- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ½ cup corn kernels (fresh or frozen)
- ¼ cup red onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
For Serving

- Fresh cilantro, chopped (optional)
Instructions
- Prepare the Vegetables: Heat olive oil in a skillet over medium heat. Add the diced red and green bell peppers, red onion, and corn kernels. Sauté for 3–4 minutes until the vegetables become tender. Season with salt and pepper to taste.
- Assemble the Quesadilla: Place one tortilla on the skillet over medium heat. Sprinkle an even portion of shredded cheese evenly over the tortilla, then add a generous amount of the sautéed vegetables on top of the cheese.
- Cook the Quesadilla: Cover the vegetable and cheese layer with a second tortilla. Press lightly to help them stick together. Cook for 2–3 minutes on one side until the tortilla is golden brown, then carefully flip and cook the other side for another 2–3 minutes until golden and the cheese has melted completely.
- Serve: Remove the quesadilla from the skillet and cut it into smaller wedges for easier serving. Serve warm with fresh salsa and sprinkle with chopped cilantro if desired for added flavor and freshness.
Notes
- Use any combination of cheeses that melt well, such as Monterey Jack, mozzarella, or cheddar.
- For added protein, consider adding black beans or cooked chicken to the filling.
- If using frozen corn, thaw and drain excess moisture before sautéing.
