Instructions

  2. Mix Ingredients: Transfer the graham cracker crumbs to a large mixing bowl. Add pumpkin puree, maple syrup, and pumpkin spice (or cinnamon) to the crumbs. Mix thoroughly until the mixture starts crumbly but softens as it combines.
  3. Form Truffle Balls: Using your hands or an ice cream scoop, shape the mixture into balls. Place each ball on a parchment-lined sheet pan and freeze them for 20 to 30 minutes to firm up.
  4. Melt Chocolate: Melt the chocolate chips in the microwave using 30-second intervals. Stir well between intervals to achieve a smooth, fully melted chocolate coating.
  5. Coat Truffles: Dip each frozen truffle ball into the melted chocolate to coat it fully. Place the coated truffles back onto the parchment-lined baking sheet. If the chocolate doesn’t harden immediately, return the sheet to the freezer for an additional 10 to 15 minutes.
