Instructions

- Prepare the Cabbage: Cut the cabbage head in half, reserving one half for another use. Trim any knobby core parts from the remaining half but leave the core intact, then slice it into four even wedges to maintain their shape while cooking.
- Sauté the Cabbage: Place the cabbage wedges flat side down in the hot skillet. Sprinkle 1/2 teaspoon kosher salt over the wedges. Let them cook undisturbed until the bottom gets nicely blackened, about 6-7 minutes. Carefully flip the wedges and cook the other side for another 6-7 minutes, allowing the cabbage to develop a rich, charred flavor.
- Prepare the Yogurt Sauce: While the cabbage cooks, combine lemon juice, minced garlic, plain yogurt, a pinch of salt, and black pepper in a bowl or jar. Stir well, adding water one tablespoon at a time to reach your desired sauce consistency.
- Serve the Dish: Remove the cabbage wedges from the skillet once charred on both sides. Taste and adjust salt if needed. Drizzle the tangy garlic yogurt sauce over the cabbage. Garnish with fresh chopped herbs like parsley or mint, or edible sprouts for added texture and flavor. Serve immediately.
