Instructions

  2. Add ricotta: Whisk the ricotta cheese into the infused mixture until smooth. Heat gently until the mixture is just under boiling, ensuring the ricotta is fully incorporated.
  3. Mix yolks and sugar: In a large bowl, whisk together the egg yolks and caster sugar until the mixture is pale and smooth, indicating the sugar has dissolved.
  4. Combine mixtures: Slowly pour the warm ricotta and cream mixture into the egg yolk mixture while whisking continuously to prevent curdling.
