  • 1 Tbsp taco seasoning

Toppings

  • 1 ½ cups shredded cheese
  • ½ cup diced tomatoes

Instructions

  1. Preheat and prepare tortillas: Preheat the oven to 450°F. Arrange the 10 small corn tortillas evenly on a baking sheet. Brush both sides of each tortilla with the 2 tablespoons of avocado oil to ensure they crisp up nicely in the oven. Bake them for 8 to 10 minutes, flipping them halfway through to achieve an even, golden crispness.
  2. Heat the filling: While the tortillas bake, place a large skillet over medium heat. Add the shredded rotisserie chicken, drained and rinsed black beans, canned corn, chunky salsa, and taco seasoning. Stir everything together and heat for 4 to 5 minutes, allowing the flavors to meld and the mixture to warm through thoroughly.
  3. Assemble the tostadas: Once the tortillas are crisp, remove them from the oven. Spoon about ½ cup of the warm chicken and bean filling evenly onto each tortilla, spreading it out gently.
  4. Add cheese and melt: Sprinkle each tostada generously with shredded cheese—about 1 ½ cups distributed over all 10 tostadas. Return the baking sheet to the oven and bake for an additional 2 to 3 minutes until the cheese is fully melted and bubbly.
  5. Finish with toppings and serve: Remove the tostadas from the oven and immediately top with diced tomatoes and your choice of optional toppings such as shredded lettuce, sour cream, avocado slices, extra salsa, a squeeze of lime juice, and fresh cilantro. Serve warm for best flavor and texture.
