Ingredients
Scale
Caramelized Figs
- 3 tbsp butter
- 1 ½ lb fresh figs, stems removed and sliced ¼ inch thick
- ½ cup brown sugar
- Kosher salt, as needed
Puff Pastry
- 1 (14 oz) sheet puff pastry, thawed
- 1 tbsp olive oil
Toppings
- ½ cup pistachios, roughly chopped
- 2 tbsp honey, plus more to drizzle
- Flaky sea salt, as needed
Instructions
- Preheat and Melt Butter: Preheat your oven to 400°F (200°C). Place an oven-safe skillet about 10 inches in diameter over medium heat on the stovetop and melt the butter completely.
- Caramelize Brown Sugar and Figs: Evenly sprinkle the brown sugar over the melted butter in the skillet. Arrange the sliced figs tightly in a single layer on top of the sugar and butter mixture. Lightly sprinkle kosher salt over the figs to enhance flavor.
- Bake Figs Until Caramelized: Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the figs soften and develop a rich caramelized glaze. Once done, remove from the oven and allow to cool slightly.
- Prepare Puff Pastry: While the figs cool, unfold the thawed puff pastry sheet and lightly brush the surface with olive oil to help achieve a beautiful golden crust.
- Top Figs with Puff Pastry: Place the puff pastry carefully over the warm figs in the skillet, tucking the edges down around the sides to encase the fruit mixture.
- Bake the Tarte Tatin: Return the skillet to the oven and bake for an additional 20 to 25 minutes until the puff pastry is golden brown and puffed up beautifully.
- Invert and Garnish: Carefully flip the skillet onto a serving plate to invert the tart so the caramelized figs are on top. Drizzle generously with honey, sprinkle with the chopped pistachios, and finish with flaky sea salt to taste.
Notes
- Use ripe but firm figs for the best texture and sweetness.
- Ensure the puff pastry is fully thawed before using to prevent cracking.
- This dessert is best served warm to enjoy the gooey caramel and flaky pastry.
- You can substitute walnuts or almonds for pistachios if preferred.
- Be careful when flipping the tart out of the skillet as the caramel and fruit will be hot.
