- 1 cup clam juice
- 3 cups milk
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 2 Tbsps lemon juice
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- 1 tsp salt
- 1 lb lump crabmeat
- 1/4 cup crab roe (optional)
Instructions
- Sauté Aromatics: In a large pot over medium-high heat, sauté butter, onion, celery, and garlic until onion is translucent.
- Add Seasonings: Stir in flour, Old Bay Seasoning, nutmeg, and black pepper for about a minute.
- Deglaze: Increase heat, add dry sherry, and cook for 2 minutes.
- Add Liquids: Pour in clam juice, milk, cream, chicken broth, lemon juice, Worcestershire sauce, bay leaf, and salt. Simmer for 15 minutes.
- Incorporate Crab: Remove bay leaf, add crab meat, and roe if desired. Simmer for 4 more minutes.
- Serve: Discard bay leaf and serve hot.
