Ingredients
Scale
Brine Ingredients
- 2 liters warm filtered water
- 2 cups kosher salt (coarse)
- 2 cups granulated sugar
- 10 cloves garlic (coarsely sliced)
- 5 bay leaves
- 2 navel oranges (zest only)
- 6 liters cold filtered water
- 2 tablespoons black peppercorns
Turkey and Finishing
- 10 lb turkey, rinsed and giblets removed
- ½ cup unsalted butter (room temperature)
Instructions
- Prepare the Brine: In a large container, combine 2 liters of warm filtered water with 2 cups of granulated sugar and 2 cups of kosher salt. Stir vigorously until completely dissolved. Add 10 coarsely sliced garlic cloves, 5 bay leaves, 2 tablespoons of black peppercorns, and the zest of 2 navel oranges. Finally, add 6 liters of cold filtered water to cool the brine.
- Brine the Turkey: Rinse the 10 lb turkey under cold water, removing any feathers and giblets. Submerge the turkey fully in the brine, using an upside-down plate or weight to keep it submerged. Cover the container with a lid or plastic wrap and refrigerate for 48 hours, making sure the turkey is well brined.
- Rotate the Turkey: After 24 hours, stir the brine gently and rotate the turkey to ensure even brining.
- Preheat the Smoker: On day 3, preheat your smoker or grill to 185°F while you prepare the turkey for smoking.
- Remove and Rinse Turkey: Carefully lift the turkey out of the brine. Rinse thoroughly under cold running water, inside and out, to remove excess salt. Pat the turkey dry and allow it to come to room temperature for about 30 minutes.
- Apply Butter: Rub the entire turkey skin with ½ cup of room temperature butter to promote browning and add flavor during smoking.
- Smoke the Turkey: Place the turkey breast side up on the middle rack of the smoker. Smoke at 185°F for 2 hours. Then increase the temperature to 325°F and continue smoking until the internal temperature in the breast and thighs reaches 165°F.
- Manage Drip Pan: Place a drip pan with 1 inch of water on the bottom rack to maintain moisture. If your smoker does not have a second rack, place the turkey on a raised wire rack over a baking sheet with water, ensuring the bird does not touch the water.
- Rest the Turkey: Remove the turkey from the smoker and let it rest uncovered on a V-rack inside a roasting pan or on a wire rack placed over a rimmed baking sheet for at least 20-30 minutes to allow juices to redistribute.
- Carve the Turkey: Deconstruct the bird by removing breasts, drums, wings, and thighs before carving. Use a large cutting board placed inside a rimmed baking sheet to catch juices, which can be reserved for making gravy.
Notes
- Brining for a full 48 hours ensures maximum juiciness and flavor penetration.
- Using a butter rub helps to achieve crispy, flavorful skin during smoking.
- Maintaining water in the drip pan adds moisture and helps prevent the turkey from drying out.
- Deconstructing the turkey before carving makes serving easier and reduces mess.
- If you don’t have a smoker, you can replicate this method with a grill set up for indirect heat and wood chips for smoking.
