Instructions

  1. Sauté aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced yellow onion and minced garlic, cooking and stirring frequently until softened and fragrant, about 3-4 minutes.
  2. Cook peppers: Add the sliced jalapeño peppers and chopped red bell pepper to the skillet. Cook for 2–3 minutes until they begin to soften but still retain a bit of crunch.
  3. Brown the ground beef: Crumble the ground beef into the skillet. Cook, stirring and breaking it apart with a spoon, until fully browned and no longer pink, about 6-8 minutes.
  4. Season the beef: Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to evenly coat the beef and vegetables with the spices.
  5. Add Mediterranean ingredients: Stir in the tomato paste, halved cherry tomatoes, and Kalamata olives. Cook for another 2 minutes to combine flavors and soften the tomatoes slightly.
  6. Melt cheeses: Lower the heat to low. Add the softened cream cheese and shredded Monterey Jack cheese. Stir continuously until the cheeses melt completely and create a creamy sauce coating the beef mixture.
  7. Finish and serve: Remove the skillet from heat. Sprinkle the chopped fresh parsley on top. Serve the stir fry hot, enjoying the spicy, creamy Mediterranean-inspired flavors.
