Quesadilla Filling

  • 1/4 tablespoon oil
  • 8 ounces artichoke hearts, drained and chopped
  • 6 ounces baby spinach leaves
  • 4 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Quesadillas

  • 8 flour tortillas, 7 or 8 inch size

Instructions

  1. Make spinach mixture: Heat the oil in a large pot over medium-high heat. Add the chopped artichoke hearts and cook for one minute. Reduce the heat to medium, then add the baby spinach leaves. Cook until the spinach is wilted, stirring and turning often.
  2. Incorporate cheeses: Mix in the cream cheese, shredded mozzarella, and Parmesan cheeses. Stir continuously until all the cheeses have melted completely. Season the mixture with salt and pepper to taste. Remove the pot from heat.
  3. Assemble quesadillas: Spread about 1/4 cup of the cheesy spinach and artichoke mixture evenly on 4 of the tortillas. Top each with one of the remaining tortillas to form four quesadillas.
  4. Cook quesadillas: Heat a large skillet over medium heat. Place each quesadilla in the skillet and cook for 1 to 2 minutes on each side until the tortillas are crisp and golden brown. Be careful not to burn them.
  5. Serve: Remove the cooked quesadillas from the skillet and repeat with the remaining ones. Cut each quesadilla into 4 wedges and serve immediately.
