  • 3 cups ripe strawberries, washed and tops cut off
  • 1 1/2 cups plant-based milk
  • 1/4 cup lemon juice
  • 1/4 cup chia seeds
  • 23 tablespoons maple syrup

Instructions

  1. Blend ingredients: Combine the strawberries, plant-based milk, lemon juice, and maple syrup in a blender. Blend until the mixture is smooth and well combined.
  2. Add chia seeds: Stir in the chia seeds evenly into the blended mixture. Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb liquid and thicken the mixture.
  3. Fill molds: Pour the thickened mixture into popsicle molds. Insert sticks into each mold to prepare for freezing.
  4. Freeze: Place the molds in the freezer and freeze for 4-6 hours until the popsicles are solid and fully frozen.
  5. Unmold and serve: Remove the popsicles from the molds carefully and enjoy your refreshing, homemade strawberry chia seed popsicles.
