- 3 cups ripe strawberries, washed and tops cut off
- 1 1/2 cups plant-based milk
- 1/4 cup lemon juice
- 1/4 cup chia seeds
- 2–3 tablespoons maple syrup
Instructions
- Blend ingredients: Combine the strawberries, plant-based milk, lemon juice, and maple syrup in a blender. Blend until the mixture is smooth and well combined.
- Add chia seeds: Stir in the chia seeds evenly into the blended mixture. Let the mixture sit for 5-10 minutes to allow the chia seeds to absorb liquid and thicken the mixture.
- Fill molds: Pour the thickened mixture into popsicle molds. Insert sticks into each mold to prepare for freezing.
- Freeze: Place the molds in the freezer and freeze for 4-6 hours until the popsicles are solid and fully frozen.
- Unmold and serve: Remove the popsicles from the molds carefully and enjoy your refreshing, homemade strawberry chia seed popsicles.

- You can adjust the amount of maple syrup depending on your preferred sweetness.
- Use different plant-based milk such as almond, oat, or coconut milk according to your taste.
- Letting the chia seeds soak sufficiently ensures the popsicles have a nice texture and do not taste gritty.
- To easily remove popsicles from molds, run warm water briefly over the outside of the molds.
