- 2 cups chopped yellow onion
- 3 garlic cloves, minced
- 1 can lentils, drained and rinsed

- Salt and pepper, to taste
- 32 oz vegetable broth
Instructions
- Prepare the vegetables: Wash, peel, and chop the sweet potato into bite-sized chunks. Add 4 cups of chopped sweet potato to the Instant Pot.
- Chop onions and mince garlic: Chop the yellow onion into bite-sized pieces and mince the garlic cloves. Add these to the Instant Pot with the sweet potatoes.
- Add remaining ingredients: Add the pumpkin puree, drained and rinsed lentils, ground ginger, salt, and pepper to the pot. Pour in the vegetable broth.
- Mix everything: Stir all ingredients thoroughly to combine even distribution of flavors.
- Seal the pot: Close and lock the Instant Pot lid. Make sure the steam vent is in the sealed position.
- Pressure cook: Set the Instant Pot to high pressure and cook the soup for 8-10 minutes. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then carefully perform a quick release by opening the steam valve according to the manufacturer’s instructions.
- Store or serve: Serve the soup hot immediately, or store it in an airtight container in the refrigerator for up to 1 week. It can be frozen for up to 2 months.

- You can adjust the thickness by adding more or less vegetable broth according to your preference.
- For a smoother texture, blend the soup partially or fully after cooking.
