Ingredients
Scale
Soup Base
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons grated fresh ginger
- 2 teaspoons cumin
- ½ teaspoon smoked paprika
- 3 medium sweet potatoes, peeled and cut into 1-inch cubes
- 4 cups vegetable broth or low-sodium chicken broth
- 1 teaspoon kosher salt
- ½–1 teaspoon freshly ground black pepper, to taste
- ¼ cup heavy cream, divided
Toppings
- Roasted pistachios, chopped
- Homemade croutons
- Toasted coconut
- Fresh thyme
Instructions
- Sauté the onions: Heat the extra virgin olive oil in a Dutch oven or large pot over medium heat. Add the chopped yellow onion and cook, stirring occasionally, until the onion becomes soft and translucent.
- Add aromatics and spices: Reduce the heat to medium-low and stir in the minced garlic, grated fresh ginger, cumin, and smoked paprika. Add the sweet potato cubes and cook for 5 minutes, stirring several times to evenly coat the potatoes with the spices.
- Simmer the sweet potatoes: Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover the pot and cook until the sweet potatoes are tender when pierced with a fork, about 15-20 minutes.
- Puree the soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth directly in the pot. Alternatively, transfer the soup in batches to a stand blender with the center cap removed to allow steam to escape, and blend until silky smooth.
- Season and finish with cream: Season the soup with kosher salt and freshly ground black pepper according to taste. Stir in half of the heavy cream to add richness. Ladle the soup into bowls.
- Add toppings and serve: Drizzle the remaining heavy cream on top, then garnish with toasted coconut, chopped roasted pistachios, fresh thyme, and serve with homemade croutons for added texture and flavor.
Notes
- You can use either vegetable broth or low-sodium chicken broth depending on dietary preferences.
- Adjust the black pepper quantity to control the spice level.
- For a vegan version, substitute heavy cream with coconut cream or a plant-based cream alternative.
- Be cautious when blending hot soup—allow steam to escape to prevent pressure build-up.
- To toast pistachios, lightly roast them in a dry skillet over medium heat until fragrant, about 3-4 minutes.
- Homemade croutons add a delightful crunch, but store-bought ones can be substituted for convenience.
