- 1 teaspoon of bicarbonate of soda
- 1 teaspoon of cornstarch / cornflour
- 100g of dairy-free white chocolate chunks / chips
- 50g of freeze dried raspberries
- Raspberry jam (for filling)
Chocolate Coating
- 200g of dairy-free white chocolate
- Freeze dried raspberries (for topping)
Instructions
- Prepare Flax Egg: In a small bowl, combine the room temperature water with the ground flaxseed. Stir well and set aside for 5 minutes to thicken, creating a vegan flax egg substitute for binding the cookies.
- Preheat Oven and Prepare Tray: Preheat your oven to 180°C fan (fan-forced). Line a baking tray with greaseproof paper. This recipe makes enough dough for two trays, but bake one tray at a time for best results.
- Make Cookie Base: In a medium bowl, use a handheld whisk or stand mixer to beat the dairy-free butter, caster sugar, and vanilla extract until pale and creamy, about several minutes. Add the thickened flax egg and mix thoroughly to combine.
- Add Dry Ingredients: Sift together plain flour, bicarbonate of soda, and cornstarch. Gradually add these dry ingredients to the creamed butter mixture and mix until a thick cookie dough forms.
