Instructions
- Prepare Oat Flour: If using rolled oats, process them in a food processor or high-powered blender until they reach a flour-like consistency.
- Mix Dry Ingredients: Transfer the oat flour to a bowl and whisk in the baking powder and sea salt to combine evenly.
- Blend Wet Ingredients: In a blender, add eggs, milk, peeled and chopped apple, cinnamon, vanilla extract, maple syrup, and oil. Blend until smooth and fully combined.
- Combine Batter: Pour the wet mixture into the dry oat flour mixture and whisk gently until combined. Avoid over-mixing. Adjust the batter consistency by adding milk if too thick or oat flour if too thin. Let the batter rest for 5–10 minutes.
- Preheat Griddle: Heat a griddle or non-stick skillet over medium heat and lightly grease it with oil or butter.
- Cook Pancakes: Pour about 1/3 cup of batter per pancake onto the griddle. Cook until bubbles appear around the edges, then flip carefully.
- Finish Cooking: Cook the other side until golden brown and pancakes are cooked through.
- Serve: Add your favorite toppings such as fresh fruit, maple syrup, or yogurt and enjoy warm.
