  • 1 1/2 cups all purpose flour
  • 1/3 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp lemon zest
  • 6 Tbsp unsalted butter, melted
  • 1/2 cup heavy cream
  • Raw sugar, for sprinkling (optional)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9” deep dish pie plate, 9×9 baking pan, or 9×11 baking pan. Set it aside to be ready for the cobbler assembly.
  2. Make the Fruit Filling: In a large bowl, combine sliced fresh peaches and blueberries. Toss them with brown sugar, granulated sugar, all purpose flour, salt, vanilla extract, and lemon juice until the fruit is evenly coated. Set this mixture aside to allow the flavors to meld.
  3. Prepare Biscuit Dough: In a separate bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest. Stir in the melted butter and heavy cream just until everything is combined to form a soft biscuit dough.
  4. Assemble the Cobbler: Pour the fruit filling into the prepared baking dish and evenly distribute it. Dot the top with the cold, cubed unsalted butter to add richness during baking.
  5. Add Biscuit Topping: Using your hands, sprinkle the biscuit dough pieces evenly over the fruit filling. For a crunchy finish, sprinkle raw sugar on top if desired.
