  • 1 ¾ cups All-Purpose Flour
  • 2 cups Granulated Sugar
  • ¾ cup Unsweetened Cocoa Powder
  • 1 ½ teaspoons Baking Powder
  • 1 ½ teaspoons Baking Soda
  • 1 teaspoon Salt

Wet Ingredients

  • 2 large Eggs
  • 1 cup Whole Milk
  • ½ cup Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water

Chocolate Ganache

  • 1 cup Dark Chocolate (chopped)
  • ½ cup Heavy Cream

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease two 9-inch round cake pans thoroughly to prevent sticking and set aside.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Whisk everything together to ensure even distribution of all dry components.
  3. Add Wet Ingredients: To the dry mixture, add the eggs, whole milk, vegetable oil, and vanilla extract. Beat this mixture on medium speed for about 2 minutes until it’s smooth and well combined. Then carefully stir in the boiling water; the batter will be thin but this is expected.
  4. Bake the Cake: Evenly divide the batter between the two prepared cake pans. Bake them in the preheated oven for 30 to 35 minutes. The cakes are done when a toothpick inserted into the center comes out clean.
  5. Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then transfer the cakes to a wire rack to cool completely before frosting.
  6. Prepare the Ganache: Heat the heavy cream in a small saucepan until it just begins to boil. Pour the hot cream over the chopped dark chocolate and let it sit for 5 minutes. Whisk the mixture gently until the ganache is smooth and glossy.
  7. Assemble the Cake: Place one cake layer on your serving plate. Spread a generous layer of ganache over this first layer, then top with the second cake layer. Use the remaining ganache to frost the top and sides of the cake evenly for a beautiful finish.

Notes

  • Boiling water thins the batter and helps enhance the chocolate flavor without baking the eggs.
  • Make sure cakes are completely cool before frosting to prevent ganache from melting.
  • You can substitute dark chocolate with semi-sweet chocolate for a sweeter ganache.
