Sloppy Joe Potato Skillet is a hearty and comforting American dish combining crispy air-fried Russet potatoes with a savory, spiced ground beef sloppy joe mixture, topped with melted cheddar or Colby Jack cheese and a sprinkle of dried parsley. This one-pan meal is perfect for a satisfying dinner packed with bold flavors and textures.

Ingredients

Scale

Potatoes

  • 5 small/medium sized Russet potatoes
  • 2 tbsp olive oil
  • Salt, pepper, garlic powder, and paprika (to taste)

Sloppy Joe Mixture

  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tbsp minced garlic
  • 12 tbsp Worcestershire sauce
  • 1 (8 oz) can tomato sauce
  • 1/4 cup ketchup
  • 1 tbsp mustard
  • 2 tbsp BBQ sauce

Topping

  • 1 cup shredded cheddar or Colby Jack cheese
  • Dried parsley (for garnish)

Instructions

  1. Prepare the Potatoes: Peel, wash, and cut the Russet potatoes into cubes. Toss them in olive oil and season with salt, pepper, garlic powder, and paprika, adjusting the seasoning to your preference.
  2. Air Fry the Potatoes: Place the seasoned potatoes in the air fryer and cook at 400°F (204°C) for about 20-25 minutes. Shake the basket a couple of times during cooking to ensure even crisping. Monitor for doneness as cooking time may vary depending on the size of the cubes.
  3. Cook the Sloppy Joe Mixture: While the potatoes cook, brown the ground beef and chopped onion in a skillet over medium heat. Season with salt, pepper, onion powder, and paprika. Add the minced garlic and cook briefly until fragrant.
  4. Add Sauces and Simmer: Stir in Worcestershire sauce, tomato sauce, ketchup, mustard, and BBQ sauce into the beef mixture. Reduce heat to low and let it simmer gently to meld flavors until the potatoes are ready.
  5. Combine and Top with Cheese: Once the potatoes are crispy and cooked through, add them directly to the skillet with the sloppy joe mixture. Sprinkle shredded cheddar or Colby Jack cheese evenly over the top.
  6. Broil to Melt Cheese: Place the skillet under the oven broiler just long enough to melt the cheese, watching closely to avoid burning.
  7. Garnish and Serve: Remove from oven, sprinkle dried parsley over the dish for a fresh finish, and serve immediately while hot.

Notes

  • Check the doneness of the potatoes carefully as air fryer cooking times can vary based on cube size.
  • Adjust spices and seasonings to suit your taste preference.
  • Ground turkey or chicken can be used instead of beef for a leaner version.
