  • Author: anna
  • Total Time: 45 minutes (includes cooling time)
  • Yield: About 2 cups (16 servings of 2 tablespoons each) 1x

Description

Strawberry Shortcake Coffee Creamer is a luscious, homemade creamer that infuses your morning coffee with the sweet and comforting flavors of fresh strawberries, vanilla, and a hint of buttery shortcake. Made by gently cooking real strawberries with sugar to concentrate their flavor, then blending with creamy half-and-half and heavy cream, this creamer offers a perfectly balanced sweetness and smooth texture that enhances both hot and iced coffee. Easy to prepare on the stovetop and stored in the refrigerator for up to five days, it’s a delightful way to transform your coffee routine with a dessert-like twist.

Ingredients

Scale

Strawberry Syrup

  • 1 cup fresh strawberries, hulled and finely diced
  • 1/3 cup granulated sugar
  • 1 tablespoon water

Cream Base

  • 1 cup half-and-half
  • 1/2 cup heavy cream

Flavorings

  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon almond extract
  • 1 small pinch fine salt

Instructions

  1. Cook the Strawberries: In a small saucepan, combine 1 cup hulled and finely diced strawberries, 1/3 cup granulated sugar, and 1 tablespoon water. Stir well and place over medium-low heat. Cook for 5 to 7 minutes, stirring often, until strawberries become soft and juicy and sugar dissolves completely.
  2. Mash the Strawberry Mixture: Remove the saucepan from the heat. Using a potato masher or the back of a wooden spoon, mash the cooked strawberry mixture until the berries are broken into very small pieces.
  3. Strain the Strawberry Syrup: Position a fine-mesh strainer over a heat-safe bowl. Pour in the mashed strawberry mixture and press gently with a spoon to extract smooth syrup. Discard the thick pulp left in the strainer.
  4. Add the Cream: Return the strained strawberry syrup to a clean saucepan. Add 1 cup half-and-half and 1/2 cup heavy cream. Warm the mixture over low heat, whisking for 2 to 3 minutes until evenly pink and warm but not boiling.
  5. Add the Shortcake Flavor: Remove the saucepan from heat. Whisk in 1 teaspoon pure vanilla extract, 1/8 teaspoon almond extract, and a small pinch of fine salt. These provide the sweet bakery and subtle cake-like notes.
  6. Cool and Store: Let the creamer cool for about 30 minutes at room temperature. Pour into a clean jar, cover tightly, and refrigerate. Shake well before each use. Start with 2 tablespoons per cup of coffee, adjusting to taste.

Notes

  • Keep the heat low after adding dairy to preserve smooth texture without boiling.
  • Use ripe, sweet strawberries for best flavor and color.
  • Measure almond extract carefully; it’s potent and too much can overpower.
  • Shake the jar before pouring as natural separation may occur.
  • Reduce sugar if you prefer a less sweet creamer; flavor depends on berry sweetness.
  • For a richer creamer, replace half-and-half with more heavy cream.
  • Make ahead to allow flavors to meld and chill well before use.
  • Strain well for a smooth, grit-free finish.
  • Store refrigerated and use within 5 days for optimal freshness.
